It usually takes me at least half an hour to make even a small batch of frosting because I am constantly tasting, then adding ingredients, then tasting, and so on..<br /><br />Jill -- Thanks, yes, I definitely need more practice. Plastic or metal? ...What kinds of tips do you use? Plastic or metal? I ask because I have used both and I find that the best results come from metal tips. You can check out some of my cupcakes here for a German cupcake project I'm working on (I live in Germany): http://backpirat.rezimo.com/ and I can tell you which tips I used for any of the frostings you see that you like. Also, in all my experimenting, I find that to get good results you need a slightly chilled frosting. you can try this chocolate frosting recipe of mine that works every time and people die for it (I measure the butter and margarine by weight because it's more accurate):<br /><br />Doubled Chocolate Frosting Buttercream-Icing <br />Ingredients:<br />226g solid vegetable shortening<br />226g butter or margarine, softened<br />1 1/2 cups Dutch processed cocoa powder<br />2 teaspoon vanilla extract<br />375g Powdered Sugar<br />2 tablespoons milk<br /><br />Directions:<br />In large bowl, cream shortening and butter with electric mixer. Add cocoa and vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. I use them for all cupcakes and most cakes as well. They are sold separately from the usual tips that are included with many beginner kits.
